Potato-less masala Dosa

Dosa is one of the favorite breakfast items of Keralites. My husband is not an exception. He loves Dosa. But, due to his dietary needs, he had to give up one of his favorites for quite a long time until I came up with this recipe. You will be wondering why. He cannot have it as it contains rice and it will raise the blood sugar level. Please read my ‘about me’ section to know more. When I made this version of dosa for the first time and turned to be a success, I was jumping out of joy.
So, here is the recipe. ENJOY!

Plain Dosa: Pancake and paper roast style

Base: QUINOA PAPER ROAST DOSA

INGREDIENTS:

Organic white quinoa- 1/4 cup
Split black gram(Urid dal)- 1 cup
fenugreek- 1/4 tsp (optional)
Salt- 1 Tsp

METHOD:

Soak all the above in water in separate in different containers for 7-8 hours. Do it in the morning.
After 7-8 hours, blend everything one at a time in a blender until you get the consistency of pancakes batter. Maybe slightly thicker. Leave it overnight in a bowl. It will rise.
For breakfast, we delicious dosas either in the crispy style (like in the picture) OR the pancake style. If you want it crispy style make it like crêpe.

CAULIFLOWER MASALA FOR MASALA DOSA (An excellent substitute for potato)

Cauliflower- 1 small head (2 cups roughly chopped into very small pcs) This is the substitute for potato
Mild Green chilly- 3 chopped
Garlic- 6-7 cloves roughly chopped
Ginger- 1/2 ” roughly chopped
Red onion- small thinly sliced
Mustard seeds- 1/2 tsp
Urid dal- 1/2 Tsp
Curry leaves- few
Sunflower oil- 3/4- 1 Tbsp
Turmeric powder- 1/4 tsp
Salt

METHOD:

Into hot oil add mustard seeds, let it pop. Reduce the heat, Add urid dal. Sauté until it turns slightly brown. Into this add all the other ingredients except turmeric powder and cauliflower. Sauté in low heat until the onions turn light brown. Now add turmeric followed by cauliflower and 1/2 cup water and salt. Cover the pan and let it cook until it’s soft and becomes dry (not too dry).

First, make the paper roast as shown in the video. Fill this masala on one side of the dosa and then fold.

Usually, my husband has regular dosa with sambar and coconut chutney. As this is masala dosa, he avoided sambar and had only red coconut chutney with it as the additional carb is added in the form of cauliflower. That’s how I balance my husband’s carb intake in every meal. But, if it is regular dosa, he has them with Sambar and/or chutney.
